Our kitchen and Patisserie team consists of knowledge and experience combined with youthful innovation and enthusiasm. We let ourselves and our dishes be inspired internationally and have mastered the flavors from cultures beyond our own national borders. At the same time, the team is proud of its’ region and its’ local products - working closely with local butchers, farms & cultivators.

FARM TO TABLE

Fowl and their eggs, such as the milk for our ice creams and wedding cakes, are sourced from local farms. For fruits and vegetables we let ourselves be guided by the seasons, and freshwater fish & shellfish are caught regionally. Our registered vinologist not only proposes suitable wines for the culinary interpretation of your day, but the Castello also has its own wines made from our own vineyard. This versatility combined with limitless creativity makes us unique in who we are.

Our chef de Cuisine is specialized in various cuisines and customs from all over the world, whether you are looking for Persian, Asian, Arab or European cuisines, our culinary team has not only been trained in these cuisines but has also travelled and experienced the dishes in their places of origin to truly master each cuisine from spices to customary handlings.

PATISSERIE

Our in-house Patissier has trained under some of the world’s most renowned pastry Chefs and has since also gained accreditation to train aspiring Chefs. Not only is our culinary team able to design your dream wedding cake, but our team will build the ingredients, from scratch, to make for the most flavorful experience. Your own style, symbols and/or color schemes are just a fraction of the possibilities.

Our culinary team holds a myriad of qualifications in the recognized disciplines of pastry chef, chef de cuisine, vinology & education. They are also active members of recognized culinary institutes to ensure our standards can always be exceeded.
